Sweet Heat Summer Shrimp Salad

 

 

This Sweet Heat Summer Shrimp Salad (phew, try saying that 5 times fast) is a refreshing and delicious dish — great paired with chips to turn into a party salsa, or equally yum with a fork on its own!

 

I tried to come up with something that defies the struggles of being invited over a friend’s home for a party: whether that be worrying whether or not there will be food there to meet dietary needs or having to contribute a dish, yet not wanting to simply buy a fruit platter, but also not wanting to make a mess of your kitchen while trying to prepare a dish fit for a French pastry chef.

 

This Summer Salad solves it all! For one, it is made up of a minimal amount of ingredients, yet all inexpensive and easily bought in bulk — perfect for parties small or large! Healthy, quick, easy, and having guests think you spent way more time in the kitchen than you actually did! 😉

 

I made mine for four people! Feel free to add or cut back on serving sizes to please however many people are in your party!

Here’s what you’ll need:

2 large green bell peppers

2 large red bell peppers

2 medium red onions

2 mangoes

1/2 cantaloupe

1/2 seedless watermelon

8 oz. pre-cooked frozen shrimp

1 bunch cilantro

juice of 1 lime

pink Himalayan salt

fresh ground pepper

red pepper flakes

 

Directions:

There are no directions really needed!

  • Lay out the shrimp to thaw while you chop all of your ingredients.
  • Simply dice everything up & put it in a large mixing bowl with the lime juice, salt, pepper, and red pepper flakes.

The spices are completely customizable to your own preference. Want a kick? Throw in some more dashes of red pepper flakes! Have a sweeter tooth? Simply use a lighter hand on the red pepper!

  • Once everything is thoroughly mixed together, cover & place in fridge to marinate together for at least 1 hour.
  • Take it out of the fridge & enjoy! If serving as a salsa, pair it with your favorite chip!
