BLUEBERRY OATMEAL MUFFINS⠀
😋 perfect, not-too-sweet brekkie/snack/dessert ⠀

1. Soak 2.5 c rolled oats & 1.5 c unsweetened almond milk at least 2 hrs. 🥣 (until oats absorb milk)⠀
2. Preheat oven 375F & spray muffin tin w cooking oil. ⠀
3. Add:⠀
1 egg 🍳 ⠀
1/3 c honey / maple syrup 🍯 ⠀
2 tbsp melted coconut oil 🥥⠀
1 tsp baking powder⠀
1 tsp vanilla⠀
1 tsp cinnamon⠀
1/4 tsp salt⠀
4. Gently fold in 1 c fresh blueberries. ⠀
5. Bake 25-30 mins, until tops are golden & springy to touch. 👩🏼‍🍳 ⠀
6. Allow to cool in pan.⠀

Enjoying the little things more than ever these days & finding myself picking old hobbies back up & spending lots of time outdoors! ☀️ ⠀
🥰 No better way to nourish mind, body AND soul! ⠀

1. Doubled my garden in size. 🌻 Added basil, jalapeño, eggplant & watermelon! 🍉 ⠀
2. Took my workout outdoors for extra Vit D! ☀️ ⠀
3. Made a lil inspo board w old magazines I had lying around. 🎨 Used to LOVE crafting like this any change I got & equally loved tapping back into it!⠀
4. Couldn’t go on about my weekend without mentioning Chef Shan! 👩🏼‍🍳 Took full advantage of that 🌞 & grilled dinner! ⠀
5. Sunday mornings are for pancakes! 🥞 You can find the recipe to these blueberry VEGAN ones in my feed! 😋 ⠀
6. Headed to the reservoir bc on Sundays I like tot air a break from my high intensity workouts, but still want to move! 🌊 Doing it in this beautiful setting made me ☺️!⠀

celery ⠀
shredded carrot 🥕 ⠀
broccoli 🥦 ⠀
snap peas ⠀
green pepper ⠀
red onion & garlic 🧄 ⠀
& pineapple of course 🍍 ⬆️ all stir-fried in one pan w coconut aminos, toasted sesame oil, lime juice, S+P to taste & red pepper flakes for extra 🔥 ⠀

🍤 I also included pork & shrimp, but simply omit & this meal is vegan! 😌⠀
🍚 Serve over rice! ⠀

👩🏼‍🍳 Making all sauces/marinades/spice rubs myself is a HUGE part of how I’m able to eat all the foods I enjoy without flaring up my stomach! ⠀
😌 Tonight’s dinner was no different w these TERIYAKI DRUMSTICKS !! 🍗 ⠀

homemade teriyaki sauce:⠀
1 c coconut aminos/soy sauce 🍶 ⠀
2 tbsp EVOO ⠀
2 tbsp rice wine vinegar ⠀
1 tbsp agave/honey 🍯 ⠀
2 tsp toasted sesame oil ⠀
juice of 1 lime⠀
lots of sesame seeds ⠀
⬆️ Ideally, marinate 🍗 6-8 hours! ⠀

🍍 grilled pineapple⠀
🥔🧅 roasted mini white potatoes & white onion ⠀
🥒🍅 cucumber & tomato salad w balsamic⠀

Like this ⬆️ ALMOND-CRUSTED TILAPIA W ROASTED ASPARAGUS & TOMATOES !!! ⠀

🥜 almond meal = ground up almonds & the perfect breadcrumb substitute ((I season them w oregano, S+P))⠀
•••⠀
👩🏼‍🍳 coat fish in egg, then ‘breadcrumbs’ & bake on 400F for 15 mins, flipping once⠀
👩🏼‍🍳 served w asparagus, cherry tomatoes, & lemon wedges⠀

🥕 bakes carrot & parsnip ‘fries’ in ghee, thyme & salt⠀
