    Caribbean Jerk Chicken & Rice Inspired by my summer trip to the Caribbean, this jerk chicken dinner is super spicy, but keeps you wanting more! Paired with pineapple rice and roasted veggies, this is a dinner that has spice, sweet heat, and even makes for great leftovers!
